Recipe: Homemade Salted Caramel
Ingredients:
- 1 cup (200g) granulated sugar
- 6 Tablespoons (90g) salted butter, cut up into 6 pieces
- 1/2 cup (120ml) heavy cream
- 1 teaspoon salt
Directions:
- Heat granulated sugar in a medium saucepan over medium heat, stirring constantly with a high heat resistant rubber spatula or wooden spoon.
- Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn.
- Once sugar is completely melted, immediately add the butter. Be careful in this step because the caramel will bubble rapidly when the butter is added.
- Stir the butter into the caramel until it is completely melted, about 2-3 minutes.
- Very slowly, drizzle in 1/2 cup of heavy cream while stirring. Since the heavy cream is colder than the caramel, the mixture will rapidly bubble and/or splatter when added.
- Allow the mixture to boil for 1 minute. It will rise in the pan as it boils.
- Remove from heat and stir in 1 teaspoon of salt. Allow to cool down before using.
- Make ahead tip: You can make this caramel in advance. Make sure it is covered tightly and store it for up to 2 weeks in the refrigerator. Warm the caramel up for a few seconds before using in a recipe. This caramel is OK at room temperature for a day if you're traveling or gifting it.
Recipe : Soft Chocolate Cookies with Salted Caramel

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1⁄4 teaspoon salt
3/4 cup cocoa powder
1 cup unsalted butter, at room temperature
1 cup granulated sugar
1 cup light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips ( I didnt put any )
1/2 cup chopped pecans ( I didnt put any )
1/2 cup caramel bits or chopped caramels ( I didnt put any )
Salted caramel sauce for drizzling
directions:
1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or Silpat baking mat. Set aside.
2. In a medium bowl, whisk together flour, baking soda, salt, and cocoa. Set aside.
3. With a mixer, cream butter and sugars together until smooth. Add in eggs, one at a time. Next, add in vanilla extract and mix until combined.
4. Gradually add flour mixture and beat until just combined. Scoop the dough into rounded tablespoons and place on prepared baking sheet, about 2 inches apart.
5. Bake cookies for 8-10 minutes, or until cookies are set, but still soft in the center. Remove from oven and let sit on baking sheet for 3 minutes. Move to a cooling rack and cool completely. Drizzle cookies with caramel sauce and serve.

Bahan - bahan
3 cawan tepung gandum
2 1/4 sudu kecil soda bikarbonat
3/4 sudu kecil garam
3/4 cawan serbuk koko
3/4 cawan air suam
1 1/4 cawan gula kastor
1 1/4 cawan gula perang
195g butter
3 telur saiz besar
3/4 cawan buttermilk ( susu + sedikit cuka)
Cara -cara
1. Satukan serbuk koko dan air suam. Kacau dan ketepikan
2. Ayakkan tepung, soda bikarbonat dan garam
3. Di dalam mangkuk, masukkan gula dan butter. Putar sebati selama 3 minit
4. Tambah telur satu persatu. Pukul rata
5. Selang selikan adunan tepung, air koko dan buttermil dan pukul rata
6. Tambahkan esen vanilla dan pukul sebati
7. Masukkan kedalam loyang dan bakar selama 30-40minit pada suhu 170C

Recipe : Cinnamon Rolls

Usually when baking cinnamon rolls, people often glazed it with sugar or spread some cream cheese glaze. And since, I am quite lazy to whipped out the cream cheese, and for sugar glaze, the cinnamon rolls will become too sweet too handle. So tadaaaaaa cinnamon rolls without any glaze !
Ingredients
Dough:
1/4 -ounce package yeast
1/2 cup warm water
1/2 cup milk
1/4 cup sugar
1/3 cup butter or shortening ( I use shortening )
1 teaspoon salt
1 egg
3 1/2 to 4 cups all-purpose flour ( I use 4 cups)
Filling:
1/2 cup melted butter, plus more for pan
3/4 cup sugar, plus more for pan
2 tablespoons ground cinnamon
In a small bowl, dissolve yeast in warm water and set aside.
In a large bowl mix milk, sugar, melted butter, salt and egg.
Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle.
Knead dough on lightly floured surface for 5 to 10 minutes.
Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.
When doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle. Spread melted butter all over dough.
Mix sugar and cinnamon and sprinkle over buttered dough. Beginning at the 15-inch side, role up dough and pinch edge together to seal. Cut into 12 to 15 slices.
Coat the bottom of baking pan with butter and sprinkle with sugar.
Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes. Bake for about 30 minutes or until nicely browned.

TART TELUR
Untuk Kulit
500gm tepung gandum
1 1/2 cawan marjerin
1 sudu besar lemak sayuran @ shortening
2 sudu besar gula
1 biji telur
Untuk Kastard
1 cawan susu cair
4 biji telur
1 cawan gula
1 cawan air biasa
1 sudu makan tepung kastad
1/2 sudu teh esen vanilla
1/2 sudu teh pewarna kuning
CARA
Untuk Kulit
1. Sapu rata minyak pada acuan tart
2. Gaul kesemua bahan kecuali TELUR sehingga menjadi serbuk roti
3. Masukkan telur dan gaul rata
4. Canaikan doh setebal 1/2 cm dan terap bulat. Letakkan kulit tart di dalam acuan
5. Cucukkan kulit dengan garfu
6. Bakar selama 15 minit pada suhu 180C
Untuk Kastard
1. gaul semua bahan sehingga sebati
2. Tuang ke atas kulit yang sudah masak
3. Bakar selama 10minit atau sehingga masak
4. Sejukkan dan hidang
